1 Zuchinni per person
1 Tin Diced Tomatoes
1 Tin or Jar of Pasta Sauce
1 Punnet of Cherry Tomatoes
Pink Salt and Ground Pepper to taste
Parsley or Coriander
Spiralizer, Colander, Pan, Pot, Wooden Spoon
Place a pot of water onto the stove and bring to the boil. Empty diced tomatoes, pasta sauce and cherry tomatoes in a pan with a little olive oil and bring to a slight simmer. Simmer for ten minutes adding pink salt and ground pepper to taste. Add more water if desired or needed.
While you are bringing the water to the boil using a spiralizer - prepare your zuchinni.
Once the water is boiling well, cook for two minutes exactly. Remove from heat and drain immediately using a colander. Toss slightly to remove excess water.
Serve onto plates or bowls in the following order: Noodles, Pasta Sauce, Grated Cheese, Parsley
